Kisir, Turkish dish


Kisir is a Turkish version of Tabbouleh.  In Turkey, it is served at afternoon tea or as a mezze, small dishes of Middle Eastern cuisine.  The tomatoes were not mixed into the salad as they tend to get mushy but were served with the salad.  Pomegranate molasses was used in this recipe as was tomato ketchup and hot sauce when the Bulgar was made. 






The bulgar wheat was made following the recipe on the box; to the hot water, ketchup and hot chili sauce was added. 




To the Bulgar; 


  • 1 bunch green onion, finely chopped
  • 1 small onion, sliced thinly
  • 1 bunch parsley, finely chopped
  • Fresh mint, finely chopped 
  • 1 cucumber, finely chopped
  • 1 bell pepper or banana pepper, finely chopped
  • 2 tbsp pomegranate syrup
  • 1  lemon, juice  
  •  freshly ground pepper
  • 1 tsp cumin
  • 1/4- 1/2c Olive oil

To the bulgur; add pepper flakes, freshly ground pepper, cumin, pomegranate molasses, lemon juice and olive oil.  



Add the vegetables: Bell pepper or banana peppers, spring onion, cucumber, fresh mint and parsley. Adjust to taste lemon juice and Olive Oil.  







The kisir was served with chopped tomatoes and wrapped in Romaine Lettuce Leaves




This was a delicious way to serve the Kisir and a perfect lenten or summer dish!

Asian Noodles


It has been most interesting planning lenten dishes and looking for recipes that are not only meatless but dairy less. 

This Asian noodle recipe can be the base for many variation in seafood, noodles, vegetables and dressings.   




Noodle salad always looks great and is delicious!  The important thing is getting the right balance between heat, bitterness, salt and sugar in the dressing.  






  • 1 T Peanut Butter
  • 2 T sesame paste
  • 2 T soya sauce
  • 2 T rice vinegar
  • grated ginger
  • minced garlic
  • 1 tsp garlic chili sauce


For me the dressing lacked acidity and sugar


  • Increase the amount of peanut butter to 2 T and don't use the sesame paste, it just mudded the taste, instead drizzle sesame seed oil over the salad before serving
  • Add lime juice to taste
  • I did add 1 T sake









Julienned slices of cucumber and green onion along with grated carrot was added to the noodles, tossed in the adjusted dressing.  Other vegetables that could be added, pea pods, avocado, broccoli, cabbage etc.  




Garnish with sesame seeds, chopped cilantro, and smoked salmon 





The recipe I followed was by Smitten Kitchen as I had the ingredients, the blogger does talk about the noodles and the difference in taste.  




The beautiful bowl does come from Japan and was gift from a Japanese friend who visits her family regularly.

Vegetable Noodle Bowl with Homemade Ponzu Dressing

 

This easy noodle bowl dish is refreshing and delicious. It is a good way to use up vegetables in your refrigerator.  Perfect as a lenten dish or to reduce the amount of meat in our diet. 



Ponzu dressing is a citrus based watery thin soya dressing which you can also buy in the Asian  section of the Supermarket but easily made at home. 

Ponzu Dressing:

1/4 c soya sauce
1/4 c water
2-3 T mirin/sake
2-3 T rice vinegar
3- 4 T lemon juice or lime juice
1 T dried Bonito flakes 
1-2 tsp Chili flakes
Rind from the fruit

A combination of lime and lemon as the juice is very nice.  I also used a small chunk of Jalapeños in place of  chilli flakes. 

Combine the ingredients in a  sauce pan and bring to boil. Stain sauce into a jar.





For this noodle salad use a combination of vegetables. 

I dehydrated Shitake Mushrooms in hot water until soft, then sliced them thinly as this mushroom is very meaty.  White mushroom can also be used. 

Pan fry the mushrooms in a bit of olive oil along with minced garlic clove and minced fresh garlic.  You can add a hot chilli 



Add finely sliced vegetables.  I used cabbage, white onion and red bell peppers. 


To assemble either in a single bowl or family style eating, add the cooked noodle, then the sautéed vegetables, grated carrots, finely chopped cilantro.  I topped this with steamed shrimp, drizzled the Ponzu dressing, sprinkled sesame seed.  

The combination is endless, other vegetables such as pea pods, bok choy, Chinese Cabbage, peanuts and green Onions.
