CHINESE BBQ PORK (CHA SIU)

One of the nice things about planning a Chinese dinner is that you can increase the number of dishes especially with unexpected guests..

The recipe for this marinating sauce was from The Woks of Life  which I did modify.

Ingredients for BBQ sauce

  • 2 tablespoons sugar
  • 1 teaspoon salt
  • ½ teaspoon five spice powder
  • 1 teaspoon paprika
  • ¼ teaspoon pepper
  • 1 tablespoon vinegar (I used Sake)
  • 1 tablespoon dark soy sauce
  • ½ teaspoon sesame oil
  • 2 teaspoons hoisin sauce
  • 2 teaspoons ketchup
  • 2 teaspoons molasses (I used Pomegranate Molasses)
  • 1 tablespoon oil
  • garlic, minced
  • 1 tablespoon hot water

Yes, this is a lot of ingredients to make this sauce.  A lot of these ingredients are in the kitchen, but probably not the Chinese 5 spice which includes the Anise seed; very aromatic with a distinct flavor.   The robust flavor of the Anise seed is great in pickled beets.

The Baby Back ribs were marinated in this sauce overnight and then slowly braised wrapped in foil at 250 degrees for 4 hours until the meat was tender.  The ribs could have been BBQ for a richer color!
